To give the most authentic feel to your medieval wedding would be to have musicians dressed for the period. A single harpist, or a mandolin player would be simple but effective. A professional harpist etc. will have a wedding repertoire, consisting a various pieces appropriate for your occasion.

Other period style instruments would include the flute, guitar, horns, spinet (before the harpsichord), organ or drums.

As general background music, or even during the church ceremony (if permitted), CDs are effective. Easily hidden behind a curtain. Medieval-style music are quite readily available.
